| Ingredients: |
Fresh herbs of your choice e.g. parsley, bay leaf, rosemary, lemon,
lemon grass; carrots, dry white wine, black peppercorns, sea salt,
butter. Foil to wrap.
Serve with additional vegetables e.g. potatoes, salad or many other alternatives. |
| Preparation: |
Remove the head, tail and innards. Make two or three incisions
(depending on the size of the fish) into the flesh on only one side.
Spread the sea salt and peppercorns along the cut side and rub well
in. Add a few herbs into the belly cavity. Put it onto the foil and add the herbs and other ingredients. Place 2 or 3 slices of lemon on top. |
| Cooking: | Wrap it and seal it all in the foil and place on a baking tray. Put into a preheated oven 190C/375F/(Gas mark 5 in the UK) for 20-25 minutes per 500g weight. |
